I was recently messaging someone and she said she doesnt accept cash because she worries about theft but told me just to pick an apple card on the way to see her is that normal or odd. I just find it weird that she would accept that when we met in person

Paying for anything , in any currency other than cash is a scam.
Check out scamfish on YouTube, they will go through a lot of stories of people getting scammed and you will understand why scammer ask for gift cards. Harder to trace and recover than money.

if you did buy the cards, when you got to the "location" she will ask for the numbers on the card so you can "come in". Once she gets the numbers and can spend it, you will not be meeting this person.
Its a variation on eTransfer scams but its not traceable and not tied to someone's personal bank account so they like this better.
Cash upon meeting in person or else do not go.
The only exception would be someone well reviewed you know who is travelling and wants to book your time ahead with a small deposit so you don't miss out. And that is an exception most people would not make either.
